BLADE TENDERIZING EQUIPMENT - BLADETENDER

APPLICATION

The blade tenderizing heads "BLADETENDER" produce a multitude of cuts in the meat muscle, increasing the surface for extraction of myofibrillar proteins, reducing cooking loss, improving yield, minimizing defects in intermuscular binding and preventing the appearance of holes in the product’s slice. Used mainly for whole meat pieces of high quality, as well as for high-yield and cook-in products.

SYSTEM

Hydraulically synchronized and coupled to " MOVISTICK" injectors, in models 4000 and 5500 the number of injection cycles per tenderization cycle can be adjusted.

Adaptable to different blade types, depending on product, by means of interchangeable blade heads.

Easy changing of heads, cleaning and sanitation.

Hydraulically or electrically (models 4000 and 5500) controlled start and stop.

In all models the tenderizing head can be stopped, being possible to inject with no tenderizing action.
